This kale shake is ideal for starting your day, alongside a protein source.
- 2-3 cups of kale leaves, with hard stalk removed
- 1 tablespoon xMCT (adjust to your own level; if starting out use one teaspoon)
- half cup of blueberries, or 1 cup of mango
- 2-3 tablespoons of virgin olive oil
- 2 tablespoons of lemon juice, or 1/3 of a lemon
- half a teaspoon of powdered ginger (optional)
- teaspoon of wheatgrass powder (optional)
- add water sufficient to almost reach the top of the ingredients (usually about 2 cups).
Place all the above into a blender, and blend for at least 3 minutes.
Pour into a large mug and enjoy.
